With over a decade of experience in some of Dubai’s most prestigious dining destinations, Djordje is a true connoisseur of fine wines.
His professional journey has included crafting acclaimed wine programs, leading pre-opening teams, and designing sophisticated food and wine pairings that elevate the guest experience with every sip.
Originally from Serbia, Djordje developed a passion for hospitality early on, completing his education in Restaurant Management at the High School for Restaurant Management in Novi Sad.
It was in Dubai, however, that his fascination with wine truly flourished.
Immersing himself in diverse labels, rich traditions, and the global stories behind each bottle, he found inspiration for a career centered on both mastery and storytelling.
He began his sommelier career at La Cantine du Faubourg before advancing to key roles at Indochine DXB, Fouquet’s by Groupe Barrière, and Salvaje & Arrogante Dubai.
In each of these venues, he played a central role in developing comprehensive and thoughtfully curated wine programs.
His approach introduced immersive wine experiences that resonated with seasoned enthusiasts and curious newcomers alike.
Now heading the wine program at Amelia Dubai, Djordje oversees an expansive selection of over 300 labels.
His curatorial philosophy blends old-world sophistication with modern sensibilities, aligning seamlessly with Amelia’s bold culinary concept that fuses Japanese, Peruvian, and Mediterranean influences.
His expertise extends beyond the wine list to encompass pre-opening leadership, wine list curation, food and wine pairing, team mentorship, and the organisation of exclusive events. These include private tastings, collaborations with winemakers, and engaging masterclasses that deepen guest appreciation for the craft.
Djordje has been recognised within the industry through repeated inclusions in the Star Wine List, a testament to his refined palate, creativity, and dedication to excellence.
