Avolta wins 12-year dining deal at Toronto Pearson, bringing Canadian flavors to 57,500 square feet

CANADA – Swiss F&B giant Avolta has secured a 12-year dining contract at Toronto Pearson International Airport, tasking its HMSHost subsidiary with transforming the culinary experience across more than 5,300 square meters (57,500 square feet) of space in Terminals 1 and 3.

The ambitious overhaul will introduce a slate of beloved Canadian brands alongside digital innovations designed to make airport dining smoother, faster, and infinitely more delicious.

Canadian Stars Take Center Stage

Travelers passing through Canada’s busiest airport will soon find themselves spoiled for choice.

The new lineup includes Mary Brown’s Chicken, the country’s fastest-growing fried chicken chain; OEB Kitchen + Bar, a breakfast-and-brunch concept famous for its creative eggs Benedict; and Libretto Slice Shop, serving up New York-style pizza by the slice.

It’s a deliberate celebration of homegrown flavors that gives international visitors a true taste of Canada before they even leave the terminal.

Chef Roger Mooking Doubles Down

HMSHost is also deepening its collaboration with acclaimed Canadian chef Roger Mooking, best known as co-host of the hit cooking show “Man Fire Food.”

The partnership will develop a new F&B concept to complement his existing Terminal 1 venue, Twist by Roger Mooking.

The new addition promises to bring even more of Mooking’s signature style—think globally inspired dishes with a creative twist, to Toronto Pearson’s dining scene.

Digital Upgrades Mean Less Waiting, More Eating

The transformation isn’t just about what’s on the menu.

The program includes a refresh of existing concessions with updated menus and a major emphasis on digital tools.

Planned features include digital waitlists so travelers can secure a table without hovering, and self-order kiosks to speed up the ordering process.

Customers will also be able to use the Club Avolta loyalty scheme at the airport, accessing offers, rewards, and cross-promotions across participating outlets, turning a layover into a rewarding experience.

A Quarter-Century Partnership Hits New Heights

Steve Johnson, Avolta North America President and CEO, framed the deal as an exciting evolution of a partnership that began nearly 25 years ago.
