Iro Sushi signs agreements to open ten new sites in the UK, pursuing a goal of 100 outlets by 2030

Beyond opening new locations, Iro Sushi has made significant investments in elevating its brand and streamlining operations to support rapid growth.

UK – Iro Sushi has announced plans to open at least ten additional quick-service restaurants across the UK before the end of 2026.

This expansion accelerates the company’s broader ambition to scale to 100 outlets by 2030. Two new branches in Woking and Tunbridge Wells are scheduled to launch before Christmas 2025.

Led by sushi chef Chhong Sherpa, Iro Sushi focuses on made-to-order sushi and Japanese-inspired dishes such as Salmon Selection platters, Chicken Katsu Curry, and Chicken Gyoza.

The group sources sustainable seafood from Norway and imports signature sauces and toppings from Japan.

Sherpa emphasized that the brand aims to offer restaurant-quality sushi accessible to more consumers, countering the market’s saturation with inferior sushi.

The company targets major consumer trends favoring quick, protein-rich meals that promote well-being.

Alongside UK growth, Iro Sushi is evaluating potential market opportunities in Europe and the Middle East. System sales reached about £16 million (US$21 million) in the year ending March 2025, a 56% increase year-on-year.

A recent rebrand and updated franchising guidelines set the stage for standardizing operations and supporting accelerated expansion.

Iro Sushi has also invested in robust training programs for chefs, including founder Chhong Sherpa’s expertise, further differentiating its offerings.
